TN has an open carry law. You can carry in an establishment that sells alcohol as long as it is not posted otherwise and you are nit drinking.

Tn State Parks

I'll be traveling from Charlotte, NC to TN, but during the trip I'll be driving through Cherokee State Park. As a NC CCP holder am I legally able to do this or do I need to separate my ammo and clips from my handgun?

With a valid permit you can carry in State Parks in TN. There may be old signs that say No Firearms, but these do not apply to permit holders.
