On my Samsung, it gives me a list of permissions I am going to extend to an app before it installs. If it is stuff I do not want shared with an app, I decline. Today, Menards wanted to control my camera and microphone. Why? What does a box store need with my camera and microphone?

There are delete root apps, that completely remove apps.

I always decline everything that wants to access anything on my iPhone 5S like pics, location, camera, etc

I clicked on something, don't remember what and it wanted to acces my camera, mic and location. I closed it out real quick and was like WTF!?!?

I deny the permissions. I also turn-off the wireless connection, Bluetooth, GPS, and data unless specifically needed. My wife put a piece of electrical tape over the camera on her laptop.
