Potential Hunting Dog

I am getting a Black and Tan hound border collie mix in 6 weeks. At the very least I'm getting the dog for a pet and companion for our other dog but my gears started turning. My wife's grandfather has a border collie that tracks dear and I wondered if that is something fairly easily taught. I also wondered how difficult it would be to get the dog to retrieve doves and/or tree squirrel. Personally I have only raised squirrel dogs so the other ventures would be new ground for me. If I'm outside my mind tell me I have fairly thick skin.

This is Tatanka, he's an 8 year old 130 lb Redbone/Lab cross he loves to scent track but unfortunately at some point he became gun shy, I had considered putting him through training to be a search and rescue dog, but that is really expensive. Here he's pictured with his friend Storm.
