What is the easiest way to purchase a firearm from a private seller and give said firearm as a gift and still get that look of surprise when they open it. Basically hoping there is a way to forego two sets of paperwork.

only people who know the make up of the recipient could answer this question
other than the fact that you could be in violation of all sorts of federal, state and local laws the degree of surprise depends on the nature of the recipient of such a present, it could be gratitude of it could be the look of shock.

Depends entirely upon the state of residence of all the parties involved: seller, purchaser and recipient of the gift. For example, if all the parties involved were residents of Washington state there would be no paperwork involved at all. You, as a Washington resident, would purchase the firearm from another Washington resident, wrap the gun in a box and put it under the tree and the Washington resident recipient would unwrap the gun in the box just like any other gift.

Or, if you, as a Washington state resident, chose to purchase the firearm from a dealer, in Washington state, you would do the form 4473 at the dealer, get the NICS background check done on you at the dealer, take the gun home, wrap it in a box, put it under the tree, and the Washington state resident resident would unwrap the gun in the box just like any other gift.

Other states may be more complicated between same state residents.

If all parties are not residents of the same state then Federal law requires your gift to go through an FFL. You could still wrap the gun and put it under the tree, but you would have to be physically present when it was opened and after they opened it, then you would have to deliver the gun to an FFL for formal transfer to them.
 
And if you're in some states, the surprised look would be on your face when you're arrested for 'straw purchases.' (Georgia is having a lot of "trouble" with that lately -- cause NY blames GA for NY gun crime. (!))

It might go better to buy a gift certificate for the gun you wish to 'gift' -- wrap THAT in a nice box and then take your friend/relative down to the gun store after xmas for a 'fitting.'

If the state does not require an FFL transfer for private party transfers of firearms then a gift is a gift. If the state does require an FFL transfer for private party transfers of firearms, then the gift goes through the required FFL and it's done. You do seem have a little touch of paranoia when it comes to firearms (evidenced by your flying with guns thread).

In some states, you need a bit a paranoia to stay out of jail! Especially here in Colorado where nobody's particularly sure what to do anymore. The poor people caught in the floods who lost their houses were quite worried until the DA and Sheriff announced that they would not be prosecuting anybody who needed to leave their guns at a friend's house until they got their own house again. Sadly, that would now be illegal without a background check, and illegal in any case if there was a magazine that holds more than 15 rounds.
