This is a little something I threw together for the first time a few years ago during a fishing trip in Canada.
You need:
1-2 walleye fillets per person, depending on size
Bacon (uncooked)
Large onion (s) (white or vidalia)
Fresh lemons
Emeril's Original Essence
Old Bay Seasoning
Aluminum foil
Chop onion, spread liberally as a bed on a large sheet of aluminum foil.
Pat dry one or two walleye fillets depending on size, sprinkle with Emeril's Original Essence and Old Bay Seasoning to taste.
Wrap fillet(s) with bacon, place on bed of onions.
Slice lemons (leave the peel on), place slices on bacon-wrapped fillets.
Wrap up the fillets with the aluminum foil to form a pouch.
Place on grill, medium/med high heat, for 20-30 minutes. Can also be done in an oven at about 400 degrees for 20 - 30 minutes.
Open carefully and enjoy!
